建立了1套乳化稳定性的简易评价标准,考察了油性剂、防锈剂剂量及乳化油用量对在新鲜自来水、去离子水和久置水条件下配制的乳化稳定性的影响。结果表明:对于含干扰成分较多、自身稳定性较差的乳化油,采用含杂质较多的久置水配制的乳化稳定性优于含杂质较少的新鲜自来水和去离子水配制的乳化稳定性;当乳化油配方经过优化、剔除干扰稳定性的成分后,水质越纯净,乳化液的性能越稳定;乳化油配方的优化不仅有利于强化乳化液的稳定性,而且可以提升其润滑性能和极压性能。
A simple evaluation criterion was established to compare the influence of dosage of oili﹣ness agents,antirust agent and emulsified oil on the stability of emulsion prepared with fresh water,dei﹣onized water,or water placed for a long time. It is found that for the poor stable emulsified oil with more interference components,the emulsion prepared with the long placed water containing more impu﹣rities is more stable than the one prepared with other two waters. However,for the emulsified oil with optimized formula and with less interference impurities,the more clean water used,the more stable emulsion is. Formula optimization for emulsified oil is not only beneficial to strengthen the stability of the emulsion and can improve its lubricity and extreme pressure properties.

The emulsified fuel was prepared by mixing diesel with the refined bio-pyrolysate oil (BPO) with distilling method and the influencing factors of its stabilization were researched .It was found that the stabilization of emulsified fuel was relevant to HLB value of compound emulsifier and emulsified temperature .The optimal HLB value of emulsifier was about 7 .The sta-bilization of emulsion fuel first increased and then decreased with the increase of emulsified temperature and the optimal temper-ature for good stability is 40 ℃ .The physical and chemical analysis showed that the physical property such as density ,kine-matical viscosity ,condensation point and etc could meet the standards of vehicle fuel .In addition ,the spray characteristics of e-mulsified fuel were tested by the laser diffraction technology .The results showed that the spray cone angle first decreased and then increased ,the Sauter mean diameter D32 increased gradually and the atomization quality became wor

Different degree of substitution (DS) of cationic starch was made by semi-synthesis and the infrared spectroscopy was used to characterize its structure. In addition, the electrical conductivity, viscosity properties and the emulsification in soybean oil /water system were observed. The effects of DS, mass fraction, water conditions were researched in the cationic starch emulsifying property and emulsion stability. The results showed that, cationic starch exhibited the best emulsibility and emulsified stability when the DS and the quality score are 0.145 and 2%, respectively. Furthermore, the emulsion exhibited the best emulsibility and emulsified stability when the V(oil): V(water) is 4:6 and 5:5, respectively.

The influence of stirring rate on storage stability of emulsified asphalt, ζ potential and rheological property was investigated under alkaline environment. The experimental results indicate that the storage stability of emulsified asphalt is the best, the ζ potential, the plastic viscosity and yield stress all has reached maximum when stirring rate is 1500r/min, and whether the stirring time is 5 minutes or 10 minutes. That is to say, the stability of emulsified asphalt is the best at this time.

In order to develop the butter powder formulation,to optimize the process conditions of the emulsion,based on emulsion stability and viscosity index,the butter powder formulation with carbohy-drates,proteins,stabilizers,composition and consumption of emulsifier and emulsifying conditions were studied by using the single factor test combined with orthogonal test.The results showed that composition of 30% butter,mass ratio of maltodextrin and glucose syrup was 5∶1,the consumption of 65%,sodium ca-seinate 3.5%,arabic gum 2.5%,emulsifier SE-13 0.5%,GMS 0.4%,CITREM 0.9%,under emulsifying temperature 75 ℃,emulsifying time for 15 min,the rotational speed of shearing machine 9 000 r/min,the e-mulsifying stability and embedding rate of the product was 96.7% and 92.49% respectively.

Malondialdehyde was selected as a representative of reactive aldehydes produced in the process of polyunsaturated fatty acids lipid peroxidation catalyzed by lipoxygenase,and the effects of oxidation by malondialdehyde on functional properties of soybean protein were studied. The results indicated that car-bonyl content of soybean protein increased and the solubility decreased with malondialdehyde concentra-tion increasing;with the oxidation degree of soybean protein deepening,water holding capacity,oil holding capacity,emulsifying activity, emulsion stability, foaming capacity and foam stability of soybean protein firstly increased then decreased. When malondialdehyde concentration was 0. 1 mmol/L,water holding capacity,oil holding capacity,emulsifying activity,emulsion stability,foaming capacity and foam stability of soybean protein reached the maximum value.
