The relationship of translatability and untranslatability is studied on the basis of relevance theory, which provides some guidance for translation practice.

The factors such as the differences on language and culture and the communicative purposes lead to the translatability limitation. On the basis of the studies on the translation practices of Fujian Cuisine names, it has been found from the perspective of Eco-Translatology that the differences among the linguistic ecology, the cultural ecology and the communicative ecology from the source language to the target language are the main causes that impose their effects on the translatability limitation. It is the eco-transplant that can maximize the degree of holistic adaptation and selection and the degree of multi-dimensional transformations, which will then maximize its translatability, on the basis of which, the norms on Fujian Cuisine names translation of eco-paradigm could be established.

Each language and culture has its own uniqueness and difference, thus contributing to untranslatability in translation. Based on the classifications of untranslatability made by English linguist and translator J.C. Catford, author of A Linguistic Theory of Translation, it has made the analysis of untranslatability from the two perspectives: linguistic untranslatability and cultural un?translatability, and then has proposed some practical translation strategies accordingly. It is hoped that this paper could enhance English learners’and enthusiasts’understanding of untranslatability, help them master some useful translation strategies and thus improve their translation ability and proficiency.

Translation is a complex activity concerning many factors such as language, culture, nationality and geographical environment. Translatability is a controversial issue in translation theories. Cultural dif-ferences obstruct cross-cultural communication and result in untranslatability to some extent. But un-translatability is not absolute. With the development of intercultural communication, the limit of trans-latability is cutting shorter and shorter. As an important participant in the practice of translation, the translator should play an important role. This paper discusses the importance of translator''s subjectivity from the perspective of cultural convergence and illustrates the limit of translatability is getting smaller in attempt to further research on translatability.
